Karla Gilbert’s Watermelon Pizza Recipe

Here’s a sneak peek at one of the healthy, delicious and brightly coloured recipes you can expect to see on Kool Kids menus from early 2020!

This watermelon pizza is the perfect snack for children, especially because they can get involved with creating their own pizza toppings.

Makes 10 slices of watermelon ‘pizza’

¼ watermelon

300g vanilla yoghurt

2 bananas

150g strawberries or frozen berries

350g popcorn

50g desiccated coconut

  1. Using a sharp knife, slice a quartered watermelon into 1-inch slices.
  2. Spoon yoghurt servings in bowls, cut bananas into thin slices (10 per banana), chop the strawberries/ berries and place desiccated coconut in a central bowl. Make the popcorn according to packet instructions.
  3. Using the back of teaspoons, children can spread an even layer of yogurt around the watermelon, leaving a bit of empty space at the top (where the “pizza crust” is.) They then arrange their own fruit or toppings, eating remaining yogurt if left over.
  4. Serve with fresh popcorn!
